Rock the South MALTA – 9th-12th April

rdsFinally, the day is upon us! Tomorrow is the first day of a four day festival which happens in the South of Malta. The location is Marsascala and this happens in the limits of Zion, right opposite Thomas Bay.

Although this will be the first time I will be attending, I have heard good things about it and it is why I am looking so much forward to it. There will be two stages, merchandise area, indoor and outdoor bar, food stalls as what is known as a silent disco area. During the weekend before the weekend starts,, there’s the chillout area open for those attending!

This looks like it’s going to be the ‘place to  be’ in the next days.

Have a look at the line-up and further below you can have a listen to a couple of bands which will be rocking the stages in the coming days. Do say hi if you make it to this fest 😉

Why use TripAdvisor?

Some of us do not see the purpose in Trip Advisor and think that saying your thoughts about the service you have received in a restaurant is like you are attacking them personally, or attacking the employees. The way I usually end up rating a restaurant is with regards to various aspects:

  • The food
  • The atmosphere
  • The service
  • The value of money considering all the above

Most often than not, before making a complaint on Trip Advisor,  I try to talk to one of the employees; let them know I am disappointed or that something was not as expected. If they choose to not do anything about it, then it is no longer my problem. I have tried, and I got nothing out of it. And I feel like it is about time to share this with the Trip Advisor society, to warn them on things they can expect. When something goes wrong, I would still when possible mention the good sides of the place I have visited. And just because I see something as wrong, it does not mean that everyone should agree with me. It is only my point of view.

At this point I have given almost 200 contributions to this site, and I have received over 40 helpful votes; I think I am doing something right. I’d say, that even if in Malta it is not yet as popular as it is in any other country, the tourists are looking at it to decide on the best locations and services

So before you complain about a negative rating, learn from it and fix things… Reply with concern to negative rating.. That way a customer feels like his review was read and dealt with.. Especially if the negative comment is ‘voted up’.

Then, move on.

My Pimped up Aglio, Olio & Peperoncino

Today, I decided to take a well known recipe and pimp it up to make it more tasty. It turned out divine and thought I will share it with you. Besides… I have not shared one of my recipes with you for a while 🙂

This can be served as either a main dish or as a starter…

Ingredients (for 2)

  • 200g pasta of your choice
  • olive oil
  • garlic, crushed
  • chili oil  (optional)
  • chilies, de-seeded and chopped thinly
  • mushrooms, chopped
  • butter
  • fine herbs
  • parsley, chopped thinly (optional)
  • spring onions
  • salt and pepper
  • cheese (grated Parmesan or Pecorino Romano, optional)

Method

  1. Start with cooking the pasta of your choice according to the instructions on the packet. Make sure that you leave them al dente. Drizzle some olive oil and fine herbs.
  2. Reserve 3 tablespoons of the cooking liquid in a glass on the side.
  3. In a frying pan I melted the butter and sauteed the crushed garlic and soon after, added the mushrooms.
  4. Once golden and not yet browned, I’ve put in the thinly chopped chilies, and added chili oil for the extra hot spice.
  5. Add the reserved cooking liquid.
  6. I didn’t want the spring onions to be fully cooked which is why I added them at this point. I wanted the bits to remain crunchy-ish.
  7. Once ready, add the pasta and season with parsley, salt and pepper.
  8. Toss to make sure that the pasta is covered in the mixture and everything is combined.
  9. Serve immediately with grated Parmesan or Pecorino Romano.

3 Ingredients Brownie Cake

Tried and tested; All you need is 2 eggs, 350g nutella and 150g flour. Mix them together until it forms a rather sticky dough. Place in a dish, and put in a preheated oven, and cook at 160 degrees Celsius. It took mine 25mins to be fully cooked, but always use a toothpick to check if the cake is ready. As soon as toothpick comes out of the cake clean, switch the oven off and wait for the brownie to cool down slightly before eating it.

Of childhood memories and meat

Last night, it was the first time I have ever seen a video which explains how to butcher a pig. The pig was not alive, do not worry, but the butcher explains and shows you how to best cut the pig into great pieces of meat to cook and to make sausage from.

At first, I was skeptic to watch this. Not because I am afraid of blood or disgusted. I like my meat bloody; medium to rare. The problem is, that when I was young, perhaps five years old, I saw my grandfather killing a rabbit. He had his small rabbit farm; he used to breed them, grow them up and then gives them to his family to eat. I still remember the clunk of the rabbit when it hit the wall, and the squeal which came soon after. It is the one of the first few memories I have as a child and to this day, I rarely eat rabbit. And when I do, I feel the guilt as the memories come back. But the rabbit tastes so divine, that at times it is just so hard to resist.

Those who share my love of food, I would recommend you to watch this video and start to appreciate the art of butchery and the best looking pork cuts I have ever seen.

Things I have learned today

1. The South of Malta is really beautiful in winter
2. The market in MarsaXlokk is really massive. It does not really smell like fish, as I remember it during my childhood
3. Men who can cook and absolutely love food are awesome. They get my fascination about food.
4. I need a food processor in my life ❤

The weekend was so busy and great. I wish I could extend it a bit more.
